KING is the only deck oven in the world baking with the innovative IWOS™ System (Italian Wood Oven Substitute) which mechanically replicates the air circulation found within a wood-burning pizza oven. The air below the refractory stone is heated by the heating elements and flows upwards through a cavity and channeled inside the baking chamber directly on pizzas through perforations in the bottom of the baking chamber. Pizzas are baked through a combination of heat from top and bottom heating elements as well as the flow of heated air coming in from both sides of the baking chamber.
