Algizoon contains sodium alginate, a natural extract from brown algae. Sodium alginate is used in the spherication process and gels in the presence of calcium lactate (Calazoon) ions. By dropping the alginate´s solution in a Calazoon bath, gel spheres with liquid core such as aroma capsules, fake caviar, liquids drops can be obtained. Gel spheres burst in the mouth and release a taste explosion. Dosage for the production of gel capsules:
- Stir 4 level measuring spoons of Algizoon into 120 ml of cold liquid (broth, juice, etc.) until completely dissolved, using an electric whisk
- Stir 4 level measuring spoons of Calazoon into 130 ml of cold water until it is completely dissolved
- Drip the Algizoon solution into a bath of Calazoon solution by using a measuring spoon or syringe
- The reverse spherification consists of dropping a Calazoon´s solution mixed, for example, with yogurt, in a alginate bath
- Depending on the calcium content in the raw product it might be not necessary to add Calazoon
